1 1/2 cup fresh or canned sweet potatoes, cooked 1/2 cup sugar 1 teaspoon cinnamon 1 teaspoon allspice 1/2 teaspoon salt 2 eggs, beaten 1 cup evaporated milk 2 Tablespoons butter, very soft 1 9-inch unbaked pie shell Whipped Cream (optional) Drain mashed potatoes. Mash until free of lumps. Add sugar, cinnamon, allspice, and salt. Mix well. Add beaten eggs and mix well. Blend in milk and butter. Continue to mix until all ingredients are well blended. Pour into unbaked pie shell and bake for 45 minutes at 350 degrees Farenheit. Serve hot with whipped cream (optional). |
